    Comment: Compared this with a cheapo hot ice edged $4.00 paring knife, the Henckels blade is thicker but doesn't hold an edge as well as the thinner cheapo paring knife. Three *** at best, but more like 2½

    Comment: very sharp, takes and holds an edge easily. One size up from a traditional paring knife. Perfect for in-between jobs. Bought one 3 and one 4 star. Love them both. Will be back for more.
