Early in the morning with some help from the sun, millions of very light salt crystals sometimes appear on the surface of the salt tables. The "Fleur de Sel" is then collected by master salt makers with dexterity. Fruit of the Camargue land, the Fleur de Sel is greatly appreciated for its taste and quality.
